Korean Tea Today

Today, tea ceremonies are a popular activity among housewives, while Buddhist monks and many ordinary people enjoy drinking green tea in an informal manner. To enjoy the full experience, look for a jeontong chatjip (traditional tea house). In Seoul, the alleyways of the Insadong district offer a fine selection of these. Staff will gladly show you how to prepare your tea, if you are unsure. The most important thing to remember is that the water must not be too hot or the delicate taste will be spoiled. Tea is reckoned to contain five or six tastes: salt, sweet, bitter, tart, peppery, in varying proportions. Ordinary tea will have lost most of its flavor after three servings, but very good tea may be used to make four or five rounds. Koreans will tell you that Chinese tea has perfume, Japanese tea has color, but Korean green tea has a deeper, richer taste than either. And it is better for you, too!
